Ingredients
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp black pepper
1/2 tsp dried oregano (optional)
2 large eggs
1/2 cup buttermilk
1/4 cup unsalted butter, melted
1 cup shredded cheddar cheese
1 1/2 cups grated zucchini (excess moisture squeezed out)
1/4 cup chopped green onions (optional)
Instructions
Preheat oven to 175°C (350°F). Grease a 9×5-inch loaf pan.
In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, black pepper, and oregano.
In another bowl, whisk eggs, buttermilk, and melted butter until combined.
Add wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Fold in shredded cheddar, zucchini, and green onions.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a wire rack.
Slice and serve warm or at room temperature.
