Ingredients

– 12 oz rotini pasta (or bowtie, penne, or fusilli)

– 1 cup cherry tomatoes, halved

– 1 cup cucumber, sliced and halved

– 1/2 cup red onion, thinly sliced

– 1 cup mozzarella pearls (or cubed mozzarella)

– 1/2 cup sliced black olives

– 1/2 cup salami or pepperoni, chopped (optional)

– 1/4 cup chopped fresh parsley or basil

– 3/4 cup Italian dressing (store-bought or homemade)

– Salt and pepper, to taste
Instructions

Cook Pasta:
Cook pasta according to package instructions. Drain and rinse with cold water to cool. -
Mix Veggies & Meat:
In a large bowl, combine tomatoes, cucumber, onion, olives, mozzarella, and salami/pepperoni if using. -
Combine:
Add the cooled pasta to the bowl. Pour Italian dressing over the top and toss to coat evenly. -
Season:
Add salt and pepper to taste. Toss in fresh herbs.

Refrigerate for at least 30 minutes before serving for best flavor. Enjoy cold!
