2 cups mashed potatoes (prepared and cooled)

1/2 teaspoon garlic powder

1 cup breadcrumbs

2 large eggs, beaten

Instructions
Mix Ingredients:
In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, green onions, garlic powder, salt, and pepper.
Form Balls:
Shape mixture into 1½-inch balls.
Coat Balls:
Dip each ball into beaten eggs, then roll in breadcrumbs to coat evenly.
Preheat Air Fryer:
Preheat air fryer to 400°F (200°C) for 5 minutes.
Air Fry:
Place balls in a single layer in the air fryer basket. Spray lightly with cooking spray. Cook for 10–12 minutes, turning halfway through, until golden and crispy.
Serve:
Serve warm with your favorite dipping sauce.
