2 large chicken breasts, boneless and skinless

1/2 cup grated Parmesan cheese

1/2 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Cooking spray or olive oil spray
Instructions
Prepare Chicken:
Slice chicken breasts in half horizontally if they are thick, to create thinner cutlets. Pat dry with paper towels.
Make Coating:
In a shallow bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
Prepare Egg Wash:
In another bowl, beat the eggs.
Coat Chicken:
Dip each chicken piece into the egg wash, then dredge thoroughly in the Parmesan-panko mixture, pressing to adhere.
Preheat Air Fryer:
Preheat air fryer to 400°F (200°C) for 3-5 minutes.
Air Fry Chicken:
Lightly spray the air fryer basket with cooking spray. Place coated chicken pieces in a single layer (do not overcrowd). Spray the tops lightly with cooking spray.
Cook:
Air fry for 10-12 minutes, flipping halfway through, until chicken is golden brown and cooked through (internal temperature of 165°F / 74°C).
Serve:
Remove chicken and let rest for a few minutes before serving. Enjoy with your favorite sides!
