1/2 cup dried apricots, sliced
1/4 cup shelled pistachios
1/4 cup crumbled goat cheese or feta
1/4 small red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon white balsamic vinegar or lemon juice
1 teaspoon honey
Salt and pepper to taste
Instructions

In a large bowl, combine mixed greens, sliced apricots, pistachios, goat cheese, and red onion.

In a small bowl, whisk together olive oil, balsamic vinegar (or lemon juice), honey, salt, and pepper.
