Apricot Chicken Recipe: Sweet & Savory Dish for Any Occasion

  • 4 boneless, skinless chicken breasts
  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar (optional)

 

  • Fresh parsley for garnish

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • In a bowl, mix apricot preserves, soy sauce, Dijon mustard, garlic, ginger, salt, black pepper, and apple cider vinegar (if using).
  • Heat olive oil in a pan over medium heat. Sear the chicken breasts for 2 minutes on each side until golden brown.
  • Place the chicken in the baking dish and pour the apricot sauce over the top.
  • Bake for 25–30 minutes until the chicken is fully cooked (internal temperature of 165°F or 75°C).

 

  • Let rest for a few minutes, garnish with fresh parsley, and serve with rice or roasted vegetables. Enjoy!
