- 4 boneless, skinless chicken breasts
- 1 cup apricot preserves
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar (optional)
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a bowl, mix apricot preserves, soy sauce, Dijon mustard, garlic, ginger, salt, black pepper, and apple cider vinegar (if using).
- Heat olive oil in a pan over medium heat. Sear the chicken breasts for 2 minutes on each side until golden brown.
- Place the chicken in the baking dish and pour the apricot sauce over the top.
- Bake for 25–30 minutes until the chicken is fully cooked (internal temperature of 165°F or 75°C).
- Let rest for a few minutes, garnish with fresh parsley, and serve with rice or roasted vegetables. Enjoy!
