Ingredients
4 salmon fillets
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 cloves garlic, minced
Salt and black pepper, to taste
1/2 teaspoon dried oregano or thyme
Lemon slices, for garnish
Fresh parsley, chopped (optional)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, pepper, and oregano.

Place salmon fillets on the prepared baking sheet and brush evenly with the lemon mixture.

Top each fillet with a lemon slice.

Bake for 12–15 minutes, or until salmon flakes easily with a fork.

Garnish with fresh parsley before serving if desired.
