Ingredients

2 cups cooked chicken, shredded

1/2 cup BBQ sauce

3 cups elbow macaroni, cooked & drained

2 tbsp butter

2 tbsp flour

2 cups milk

2 cups shredded cheddar cheese

1 cup mozzarella cheese

1/2 tsp smoked paprika

Salt & pepper, to taste

1/2 cup crispy fried onions (optional topping)

Fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 375°F (190°C).

Toss cooked chicken with BBQ sauce; set aside.

In a saucepan, melt butter over medium heat. Whisk in flour to make a roux, cook 1 minute.

Slowly whisk in milk and cook until thickened.

Stir in cheddar, mozzarella, smoked paprika, salt & pepper until creamy.

Combine cheese sauce with cooked macaroni and BBQ chicken.

Transfer to a greased baking dish, top with extra cheese and crispy fried onions if desired.

Bake for 20 minutes until bubbly and golden.
