Ingredients
1 lb ground beef
1 packet ranch seasoning mix
1 small onion, diced
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1 cup shredded cheddar cheese (plus extra for topping)
1 bag (32 oz) frozen tater tots
Salt and pepper, to taste
Chopped green onions or parsley, for garnish (optional)

Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

Cook the Beef: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and cooked through. Drain excess fat.

Add Seasoning & Mix: Stir in the ranch seasoning, cream of mushroom soup, and sour cream. Cook for 2–3 minutes until well combined.

Assemble the Casserole: Spread the beef mixture evenly in the prepared baking dish. Top with 1 cup of shredded cheddar cheese. Arrange the tater tots in a single layer over the top.

Bake: Bake uncovered for 35–40 minutes, until the tater tots are golden and crispy.

Top & Serve: Sprinkle with additional cheddar cheese and return to the oven for 5 more minutes until melted. Garnish with chopped green onions or parsley, if using. Serve hot!
