Beet Salad with Feta, Cucumbers, and Dill: A Refreshing and Nutritious Delight

Ingredients

  • 🥒 1 large cucumber (sliced into half-moons or quarters)

  • 🍠 2–3 cooked beets (peeled and diced or sliced)

  • 🧀 1/2 cup crumbled feta cheese

  • 🌿 2 tablespoons fresh dill (chopped)

  • 🧅 1/4 small red onion (thinly sliced, optional)

  • 🍋 Juice of 1/2 lemon

  • 🫒 1 tablespoon olive oil

  • 🧂 Salt & black pepper to taste


Instructions

  1. Prepare the veggies: If not using pre-cooked beets, boil or roast beets until tender. Peel and dice them once cooled. Slice cucumbers and red onion.

  2. Combine ingredients: In a large bowl, toss together the beets, cucumbers, red onion (if using), and dill.

  3. Dress the salad: Drizzle with olive oil and lemon juice. Season with salt and pepper to taste.

  4. Add feta last: Gently fold in the crumbled feta so it doesn’t break down too much.

  5. Chill or serve immediately. Enjoy cold or at room temperature for the best flavor.
