🥒 1 large cucumber (sliced into half-moons or quarters)

🍠 2–3 cooked beets (peeled and diced or sliced)

🧀 1/2 cup crumbled feta cheese

🌿 2 tablespoons fresh dill (chopped)

🧅 1/4 small red onion (thinly sliced, optional)

🍋 Juice of 1/2 lemon

🫒 1 tablespoon olive oil

Instructions

Prepare the veggies: If not using pre-cooked beets, boil or roast beets until tender. Peel and dice them once cooled. Slice cucumbers and red onion.

Combine ingredients: In a large bowl, toss together the beets, cucumbers, red onion (if using), and dill.

Dress the salad: Drizzle with olive oil and lemon juice. Season with salt and pepper to taste.

Add feta last: Gently fold in the crumbled feta so it doesn’t break down too much.
