1 cup old-fashioned rolled oats
1/2 cup unsweetened shredded coconut (plus extra for rolling)
1/3 cup almond butter (or nut/seed butter of choice)
1/4 cup honey or maple syrup
1/3 cup dried blueberries
1/4 cup ground flaxseed or chia seeds
1/2 teaspoon vanilla extract
Pinch of salt


Instructions

  1. Mix Ingredients:

    • In a medium bowl, combine oats, shredded coconut, dried blueberries, flaxseed, and salt.

    • Add almond butter, honey, and vanilla extract. Stir until fully mixed and sticky.

  2. Chill Mixture:

    • Refrigerate the mixture for 15–20 minutes to make rolling easier.

  3. Form Bites:

    • Roll into 1-inch balls using your hands. If desired, roll each ball in extra shredded coconut for a finishing touch.

  4. Serve or Store:

    • Enjoy immediately or store in an airtight container in the fridge for up to 1 week or in the freezer for up to 2 months.
