4 large bell peppers (any color)

2 cups cooked and shredded chicken

½ cup buffalo sauce

¼ cup ranch or blue cheese dressing

1 cup shredded cheddar or mozzarella cheese

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and black pepper, to taste

2 green onions, chopped (for garnish)

Crumbled blue cheese (optional)

Preheat the Oven:

Set your oven to 375°F (190°C).

Lightly grease a baking dish.

Prepare the Peppers:

Slice the bell peppers in half and remove seeds.

Place them in the baking dish, cut side up.

Make the Filling:

In a bowl, mix shredded chicken, buffalo sauce, ranch (or blue cheese) dressing, garlic powder, onion powder, salt, and pepper.

Stir in half of the shredded cheese.

Stuff the Peppers:

Fill each bell pepper half with the buffalo chicken mixture.

Top with the remaining cheese.

Bake:

Cover with foil and bake for 25 minutes.

Remove foil and bake for another 10 minutes until cheese is melted and bubbly.

Garnish & Serve:

Sprinkle with chopped green onions and crumbled blue cheese (if using).

Serve hot with extra ranch or buffalo sauce on the side.
