Ingredients

4 cups mixed greens (like spinach, arugula, or romaine)
1/2 cucumber, thinly sliced
1/2 cup shredded carrots
1/4 cup red cabbage, thinly sliced
1/4 cup sliced almonds (optional for crunch)
For the Carrot Ginger Dressing:
1/2 cup shredded carrots
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon grated fresh ginger
1 tablespoon honey or maple syrup
2 tablespoons sesame oil
1/4 cup olive oil
1 teaspoon lemon juice
Salt and pepper to taste
