Carrot Ginger Dressing Salad: A Fresh and Vibrant Healthy Meal

Ingredients

For the Salad:
4 cups mixed greens (like spinach, arugula, or romaine)
1/2 cucumber, thinly sliced
1/2 cup shredded carrots
1/4 cup red cabbage, thinly sliced
1/4 cup sliced almonds (optional for crunch)

For the Carrot Ginger Dressing:
1/2 cup shredded carrots
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon grated fresh ginger
1 tablespoon honey or maple syrup
2 tablespoons sesame oil
1/4 cup olive oil
1 teaspoon lemon juice
Salt and pepper to taste


Instructions

  • Prepare the Dressing: In a blender or food processor, combine shredded carrots, rice vinegar, soy sauce, ginger, honey, sesame oil, olive oil, lemon juice, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning if needed.

  • Assemble the Salad: In a large bowl, toss mixed greens, cucumber, shredded carrots, red cabbage, and sliced almonds.

  • Serve: Drizzle the carrot ginger dressing over the salad just before serving and toss gently.

 

  • Optional: Garnish with extra sesame seeds or fresh herbs if desired.
