For the Meatloaf:

1½ lbs ground beef (80/20)
-
1 cup shredded cheddar cheese (or American cheese, diced)
-
½ cup breadcrumbs (plain or panko)
-
2 large eggs
-
½ cup milk
-
¼ cup ketchup
-
2 tbsp yellow mustard
-
1 tbsp Worcestershire sauce
-
½ tsp garlic powder
-
½ tsp onion powder
-
Salt and pepper, to taste
-
½ cup finely diced onion
-
¼ cup chopped dill pickles (optional for burger flavor!)
For the Glaze:
-
¼ cup ketchup
-
1 tbsp yellow mustard
-
1 tsp brown sugar (optional, for a sweet kick)
Instructions
-
Preheat Oven:
-
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil, or grease a loaf pan.
-
-
Mix the Meatloaf:
-
In a large bowl, combine ground beef, cheese, breadcrumbs, eggs, milk, ketchup, mustard, Worcestershire, garlic powder, onion powder, diced onion, pickles (if using), salt, and pepper.
-
Mix just until everything is combined — don’t overmix!
-
-
Shape and Place:
-
Shape the meat mixture into a loaf shape (either in a loaf pan or freeform on a baking sheet).
-
-
Top with Glaze:
-
In a small bowl, stir together ketchup, mustard, and brown sugar. Spread evenly over the top of the loaf.
-
-
Bake:
-
Bake for 55–65 minutes, or until internal temperature reaches 160°F (71°C). If using a loaf pan, it may take a little longer.
-
-
Rest and Serve:
-
Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes, green beans, or a crisp salad.
