Ingredients
4 boneless, skinless chicken breasts
1 cup mushrooms, sliced
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tbsp butter
2 tbsp olive oil
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a skillet, heat 1 tbsp olive oil and 1 tbsp butter over medium heat. Add the mushrooms and cook for 5-6 minutes until softened. Stir in the garlic and cook for another minute. Remove from heat and set aside.
Cut a pocket into each chicken breast, being careful not to slice all the way through.
Stuff each chicken breast with the cooked mushrooms and mozzarella cheese. Secure the openings with toothpicks if needed.
In the same skillet, heat the remaining olive oil and butter over medium-high heat. Season the chicken breasts with Italian seasoning, salt, and pepper, then sear them for 2-3 minutes on each side until golden.
Transfer the chicken breasts to a greased baking dish and sprinkle Parmesan cheese on top.
Bake for 20-25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
Garnish with fresh parsley if desired. Serve hot and enjoy!
