Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 can (10 oz) red enchilada sauce

1 can (4 oz) diced green chilies (optional)

2 cups shredded cheddar cheese (divided)

1 cup shredded Monterey Jack cheese

8 flour or corn tortillas
-
2 tbsp olive oil
-
Salt & pepper, to taste

Fresh cilantro & sour cream, for garnish
Instructions

Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.

In a skillet, heat olive oil and sauté onion until soft. Add garlic and cook 1 minute.

Add ground beef, season with taco seasoning, salt & pepper, and cook until browned. Stir in green chilies (if using).

Spread a spoonful of enchilada sauce in the bottom of the baking dish.

Fill each tortilla with beef mixture and a sprinkle of cheese. Roll up and place seam-side down in the dish.

Pour remaining enchilada sauce over the tortillas. Top with the rest of the cheese.

Bake for 20–25 minutes until cheese is bubbly and golden.

Garnish with fresh cilantro and serve with sour cream.
