Cheesy Potato Burritos with Beef Recipe

Ingredients

  • 1 lb ground beef

  • 2 cups potatoes, peeled & diced

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or homemade mix)

  • 1/2 cup water

  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 6 large flour tortillas

  • 2 tbsp olive oil (for frying or grilling)

  • Optional toppings: salsa, jalapeños, lettuce, or guacamole


Instructions

  1. Boil diced potatoes until fork-tender, then drain and set aside.

  2. In a skillet, cook ground beef with onion and garlic until browned; drain excess grease.

  3. Stir in taco seasoning and water, simmer for 2–3 minutes.

  4. Add cooked potatoes and mix well.

  5. Place beef & potato mixture onto tortillas, sprinkle with cheddar cheese, and add a dollop of sour cream.

  6. Roll burritos tightly.

  7. Heat a skillet with olive oil and grill burritos seam-side down until golden and crispy on both sides.

  8. Serve hot with salsa, guacamole, or your favorite toppings.
