Ingredients

1 lb ground beef

2 cups potatoes, peeled & diced

1 small onion, chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade mix)

1/2 cup water

1 cup shredded cheddar cheese

1/2 cup sour cream
-
6 large flour tortillas
-
2 tbsp olive oil (for frying or grilling)

Optional toppings: salsa, jalapeños, lettuce, or guacamole
Instructions

Boil diced potatoes until fork-tender, then drain and set aside.

In a skillet, cook ground beef with onion and garlic until browned; drain excess grease.

Stir in taco seasoning and water, simmer for 2–3 minutes.

Add cooked potatoes and mix well.

Place beef & potato mixture onto tortillas, sprinkle with cheddar cheese, and add a dollop of sour cream.

Roll burritos tightly.

Heat a skillet with olive oil and grill burritos seam-side down until golden and crispy on both sides.

Serve hot with salsa, guacamole, or your favorite toppings.
