Ingredients

1 ½ lbs baby potatoes, quartered

14 oz smoked sausage, sliced into rounds

2 tbsp olive oil

1 packet ranch seasoning mix

1 ½ cups shredded cheddar cheese

½ cup shredded mozzarella cheese

2 green onions, chopped (for garnish)

Fresh parsley, chopped (optional)

Salt & black pepper, to taste
Instructions

Preheat oven to 400°F (200°C). Grease a large baking dish.

In a bowl, toss potatoes with olive oil, ranch seasoning, salt, and pepper.

Spread potatoes evenly in the baking dish and bake for 25 minutes.

Add smoked sausage slices to the dish, stir, and bake an additional 15 minutes until potatoes are tender.

Sprinkle cheddar and mozzarella over the top. Return to oven for 5–7 minutes, until cheese is melted and bubbly.

Garnish with green onions and parsley.
