Separate onion rings and match similar-sized pairs.

Place a mozzarella strip between two onion rings, pressing them together.

Coat the Onion Rings:

Place flour in one bowl, beaten eggs in another, and mix panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper in a third bowl.

Coat each stuffed onion ring in flour, then dip into the egg, and finally coat with the breadcrumb mixture. Repeat for extra crispiness.
