Chicken Sausages with Zucchini, Tomatoes, and Pasta: A Flavorful and Hearty Meal

Ingredients

  • 🍝 8 oz pasta (penne, rotini, or any short pasta)

  • 🌭 4 chicken sausages (sliced into rounds)

  • 🫒 2 tablespoons olive oil

  • 🧄 3 cloves garlic (minced)

  • 🥒 2 small zucchinis (sliced into half-moons)

  • 🍅 1 pint cherry tomatoes (halved)

  • 🌿 1/2 teaspoon Italian seasoning

  • 🧂 Salt & black pepper to taste

  • 🌱 1/4 cup fresh basil or parsley (chopped)

  • 🧀 Optional: grated Parmesan for topping


Instructions

  • Cook pasta according to package directions. Drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Add chicken sausage slices and cook for 4–5 minutes until browned and cooked through.

  • Add garlic and cook for 30 seconds, then stir in zucchini. Sauté for about 5 minutes until zucchini softens.

  • Toss in cherry tomatoes and cook another 3–4 minutes, until they begin to burst. Season with salt, pepper, and Italian seasoning.

  • Add the cooked pasta to the skillet and toss everything together. Heat through for 1–2 minutes.

 

  • Sprinkle with fresh herbs and Parmesan if desired. Serve hot and enjoy!
