Chicken with Mango Salsa: A Tropical Culinary Delight

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 teaspoon chili powder

  • 1/2 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Juice of 1 lime

Mango Salsa:

  • 2 ripe mangoes, peeled and diced

  • 1/2 red bell pepper, finely chopped

  • 1/4 red onion, finely chopped

  • 1 small jalapeño, seeded and minced

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt to taste


Instructions

Prepare Chicken:
In a small bowl, mix olive oil, chili powder, paprika, garlic powder, salt, pepper, and lime juice. Rub mixture all over chicken breasts.

Cook Chicken:
Heat a grill or skillet over medium-high heat. Cook chicken for 6–8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Let rest for 5 minutes.

Make Mango Salsa:
In a medium bowl, combine diced mango, bell pepper, red onion, jalapeño, cilantro, lime juice, and salt. Toss gently to combine.

 

Serve:
Place grilled chicken on a plate and spoon mango salsa over the top. Garnish with extra cilantro and lime wedges if desired.
