Ingredients
For the Skewers:
1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into 1.5-inch cubes
1 cup fresh pineapple chunks
1–2 chipotle peppers in adobo, finely chopped
2 tablespoons adobo sauce (from chipotle can)
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon lime juice
1 teaspoon garlic powder
Salt and pepper, to taste
Wooden skewers (soaked in water 30 minutes) or metal skewers
For the Bang Bang Sauce:
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha (adjust to taste)
1 tablespoon honey
1 tablespoon lime juice

Marinate the Chicken:

In a bowl, whisk together chipotle peppers, adobo sauce, olive oil, honey, lime juice, garlic powder, salt, and pepper.

Add chicken and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, up to 4 hours.

Make the Bang Bang Sauce:

In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Refrigerate until ready to serve.

Assemble the Skewers:

Thread marinated chicken and pineapple chunks onto skewers, alternating.

Grill the Skewers:

Preheat grill or grill pan over medium-high heat.

Grill skewers for 4–5 minutes per side, or until chicken is cooked through and slightly charred.

Drizzle with bang bang sauce or serve on the side for dipping. Garnish with chopped cilantro or green onions, if desired.
