Chipotle Pineapple Bang Bang Chicken Skewers – Sweet, Spicy, and Irresistible

Ingredients

For the Skewers:
1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into 1.5-inch cubes
1 cup fresh pineapple chunks
1–2 chipotle peppers in adobo, finely chopped
2 tablespoons adobo sauce (from chipotle can)
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon lime juice
1 teaspoon garlic powder
Salt and pepper, to taste
Wooden skewers (soaked in water 30 minutes) or metal skewers

For the Bang Bang Sauce:
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha (adjust to taste)
1 tablespoon honey
1 tablespoon lime juice


Instructions

  • Marinate the Chicken:

    • In a bowl, whisk together chipotle peppers, adobo sauce, olive oil, honey, lime juice, garlic powder, salt, and pepper.

    • Add chicken and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, up to 4 hours.

  • Make the Bang Bang Sauce:

    • In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Refrigerate until ready to serve.

  • Assemble the Skewers:

    • Thread marinated chicken and pineapple chunks onto skewers, alternating.

  • Grill the Skewers:

    • Preheat grill or grill pan over medium-high heat.

    • Grill skewers for 4–5 minutes per side, or until chicken is cooked through and slightly charred.

 

  • Serve:

    • Drizzle with bang bang sauce or serve on the side for dipping. Garnish with chopped cilantro or green onions, if desired.
