Ingredients
For the Cookies:
½ cup (1 stick) unsalted butter
2 cups granulated sugar
½ cup milk
¼ cup unsweetened cocoa powder
½ cup creamy peanut butter
1 tsp vanilla extract
3 cups quick oats
¼ tsp salt
Instructions
Prepare the Cookie Mixture:
In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder.
Stir continuously until the mixture comes to a rolling boil. Let boil for 60 seconds, stirring occasionally.
Add Remaining Ingredients:
3. Remove from heat and stir in peanut butter, vanilla extract, salt, and oats until fully combined.
Form the Cookies:
4. Drop spoonfuls of the mixture onto parchment paper or a lined baking sheet.
5. Let cookies cool and set at room temperature for 20-30 minutes or until firm.
