Cinnamon Roll Energy Bites – Healthy No-Bake Snack Recipe

1 cup old-fashioned oats
1/2 cup almond flour or finely ground almonds
1/3 cup almond butter or cashew butter
1/4 cup honey or maple syrup
1/4 cup finely chopped dates
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
Pinch of sea salt
Optional: 2 tablespoons mini white chocolate chips or chopped pecans


Instructions

  • Mix Ingredients:

    • In a large bowl, combine oats, almond flour, chopped dates, cinnamon, and salt.

    • Add almond butter, honey, and vanilla extract. Stir until fully combined. If using, fold in white chocolate chips or pecans.

  • Form into Bites:

    • Roll the mixture into 1-inch balls using your hands. If too sticky, chill mixture for 10–15 minutes or lightly oil your hands.

  • Chill:

    • Place the bites on a parchment-lined tray and refrigerate for at least 20 minutes to firm up.

 

  • Serve and Store:

    • Enjoy immediately or store in an airtight container in the fridge for up to 1 week or in the freezer for longer.
