Ingredients
1 cup old-fashioned oats
1/2 cup almond flour or finely ground almonds
1/3 cup almond butter or cashew butter
1/4 cup honey or maple syrup
1/4 cup finely chopped dates
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
Pinch of sea salt
Optional: 2 tablespoons mini white chocolate chips or chopped pecans

Mix Ingredients:

In a large bowl, combine oats, almond flour, chopped dates, cinnamon, and salt.

Add almond butter, honey, and vanilla extract. Stir until fully combined. If using, fold in white chocolate chips or pecans.

Form into Bites:

Roll the mixture into 1-inch balls using your hands. If too sticky, chill mixture for 10–15 minutes or lightly oil your hands.

Place the bites on a parchment-lined tray and refrigerate for at least 20 minutes to firm up.

Enjoy immediately or store in an airtight container in the fridge for up to 1 week or in the freezer for longer.
