Classic Grilled Artichokes Recipe: Smoky, Tender & Delicious Every Time

2 large globe artichokes
1 lemon, halved
3 tablespoons olive oil
2 cloves garlic, minced
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
Optional dip: aioli, lemon butter, or herbed yogurt sauce


Instructions

  • Prep the Artichokes: Trim the top inch off each artichoke and snip the sharp tips from the outer leaves. Slice in half lengthwise and use a spoon to scoop out the fuzzy choke in the center. Rub the cut surfaces with lemon to prevent browning.

  • Boil or Steam: In a large pot of salted boiling water (or a steamer), cook the artichoke halves for 15–20 minutes until just tender. Drain and pat dry.

  • Season: In a small bowl, mix olive oil, minced garlic, salt, and pepper. Brush the artichokes all over with the garlic oil.

  • Grill: Preheat a grill or grill pan over medium-high heat. Place artichokes cut-side down and grill for 5–7 minutes until lightly charred. Flip and grill another 3–5 minutes.

 

  • Serve: Transfer to a platter, garnish with chopped parsley, and serve warm with your favorite dipping sauce.
