1 lb ground beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

2 cups beef broth

8 oz egg noodles (uncooked)

8 oz Velveeta cheese, cubed

1/2 cup sour cream

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions
Cook the Beef:
Heat olive oil in a large skillet over medium-high heat.
Add ground beef, onion, and garlic. Cook until beef is browned and onions are softened. Drain excess fat if needed. Season with salt, pepper, and smoked paprika.
Add Liquids and Noodles:
Pour in beef broth and bring to a boil.
Add uncooked egg noodles, reduce heat to medium-low, cover, and simmer for 8–10 minutes until noodles are tender.
Add Cheese and Cream:
Stir in Velveeta cubes and sour cream until cheese is melted and sauce is creamy. Adjust seasoning as needed.
Serve:
Garnish with chopped parsley. Serve hot!
