Ingredients
For the Salmon Patties:
1 (14.75 oz) can salmon, drained and flaked (or 1 lb cooked fresh salmon)
½ cup breadcrumbs (or crushed crackers)
2 large eggs
¼ cup mayonnaise
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp Old Bay seasoning (optional)
2 green onions, finely chopped
1 tbsp fresh parsley, chopped
Salt & pepper to taste
2 tbsp olive oil (for frying)
For Garnish:
Lemon wedges
Fresh parsley
Instructions
Prepare the Patties:
In a large bowl, combine salmon, breadcrumbs, eggs, mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, Old Bay seasoning, green onions, and parsley.
Mix until well combined. If the mixture is too wet, add more breadcrumbs 1 tablespoon at a time.
Form the mixture into 6-8 patties, about ½ inch thick.
Cook the Patties:
4. Heat olive oil in a large skillet over medium heat.
5. Fry patties for 3-4 minutes on each side until golden brown and cooked through.
6. Remove from skillet and place on paper towels to drain excess oil.
Serve:
7. Garnish with lemon wedges and fresh parsley.
8. Serve with tartar sauce, a side salad, or mashed potatoes.
