Ingredients
For the Chicken Bites:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon smoked paprika
½ cup all-purpose flour
2 eggs, beaten
1 cup panko breadcrumbs
½ cup grated Parmesan cheese
2 tablespoons olive oil or melted butter
For the Garlic Parmesan Sauce:
3 tablespoons unsalted butter
4 cloves garlic, minced
½ teaspoon red pepper flakes (optional)
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Instructions
Prepare the Chicken: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. In a bowl, season the chicken pieces with salt, black pepper, Italian seasoning, garlic powder, and smoked paprika.
Coat the Chicken: Place flour in one bowl, beaten eggs in another, and mix panko breadcrumbs with Parmesan cheese in a third bowl. Dredge each chicken piece in flour, dip into the egg, then coat with the panko-Parmesan mixture. Place coated chicken bites on the prepared baking sheet.
Bake: Drizzle olive oil or melted butter over the chicken bites. Bake for 18-20 minutes, flipping halfway, until golden brown and crispy.
Make the Garlic Parmesan Sauce: In a small pan, melt butter over medium heat. Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant. Stir in Parmesan cheese and parsley.
Toss and Serve: Transfer the baked chicken bites to a large bowl and toss with the garlic Parmesan sauce. Serve warm with your favorite dipping sauce.
