Crockpot Taco Casserole Recipe – The Ultimate Comfort Food for Busy Nights

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, diced

  • 1 packet taco seasoning

  • 1 can black beans, drained & rinsed

  • 1 can corn, drained

  • 1 can diced tomatoes with green chilies (Rotel style)

  • 2 cups cooked rice

  • 1 cup salsa

  • 2 cups shredded cheddar cheese (divided)

  • 1/2 cup sour cream

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • Salt & pepper, to taste

  • Fresh cilantro & green onions (for garnish)


Instructions

  • In a skillet, cook ground beef and onion until browned. Drain excess fat.

  • Stir in taco seasoning, cumin, and chili powder. Cook 1–2 minutes.

  • Transfer mixture to crockpot. Add beans, corn, diced tomatoes, rice, salsa, sour cream, and 1 1/2 cups cheese. Stir to combine.

  • Cover and cook on LOW for 3–4 hours or HIGH for 1 1/2–2 hours.

  • Before serving, sprinkle remaining cheese on top, cover until melted.

  • Garnish with cilantro and green onions.

 

  • Serve hot with tortilla chips, warm tortillas, or a side salad.
