Ingredients

1 lb ground beef (or ground turkey)

1 small onion, diced

1 packet taco seasoning

1 can black beans, drained & rinsed

1 can corn, drained
-
1 can diced tomatoes with green chilies (Rotel style)

2 cups cooked rice

1 cup salsa
-
2 cups shredded cheddar cheese (divided)

1/2 cup sour cream
-
1/2 tsp cumin
-
1/2 tsp chili powder

Salt & pepper, to taste

Fresh cilantro & green onions (for garnish)
Instructions

In a skillet, cook ground beef and onion until browned. Drain excess fat.

Stir in taco seasoning, cumin, and chili powder. Cook 1–2 minutes.

Transfer mixture to crockpot. Add beans, corn, diced tomatoes, rice, salsa, sour cream, and 1 1/2 cups cheese. Stir to combine.

Cover and cook on LOW for 3–4 hours or HIGH for 1 1/2–2 hours.

Before serving, sprinkle remaining cheese on top, cover until melted.

Garnish with cilantro and green onions.

Serve hot with tortilla chips, warm tortillas, or a side salad.
