8 slices of sandwich bread, crusts removed
2 ripe bananas, mashed or sliced
4 ounces cream cheese, softened
2 tablespoons granulated sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 tablespoons butter for frying
For the Coating:
2 eggs
¼ cup milk
½ teaspoon cinnamon
1 teaspoon vanilla extract
For Topping:
¼ cup granulated sugar
1 teaspoon cinnamon
Maple syrup or powdered sugar for serving
Instructions
Prepare the Bread: Flatten each slice of bread with a rolling pin to make it more pliable.
Fill the Roll-Ups: In a small bowl, mix cream cheese, granulated sugar, cinnamon, and vanilla extract. Spread a thin layer of the mixture onto each slice of flattened bread. Add mashed or sliced banana on one end and roll up tightly.
Prepare the Egg Mixture: In a shallow dish, whisk together eggs, milk, cinnamon, and vanilla extract.
Coat and Cook: Heat butter in a large pan over medium heat. Dip each roll-up in the egg mixture, ensuring all sides are coated. Place in the pan and cook for about 2-3 minutes per side until golden brown.
Coat in Cinnamon Sugar: In a separate bowl, mix granulated sugar and cinnamon. Roll the cooked roll-ups in the mixture while they are still warm.
Serve: Drizzle with maple syrup or dust with powdered sugar. Enjoy warm!
