  • 12 oz rotini or penne pasta

  • 1 ½ cups cooked chicken breast (diced)

  • 6 slices bacon (cooked and crumbled)

  • 1 cup cherry tomatoes (halved)

  • 1 cup romaine lettuce (chopped)

  • ½ cup cheddar cheese (shredded)

  • ½ cup red onion (thinly sliced)

  • ½ cup cucumber (diced)

  • ½ cup avocado (diced, optional)

For the Dressing:

  • ½ cup mayonnaise

  • ¼ cup Greek yogurt or sour cream

  • 1 tbsp Dijon mustard

  • 1 tbsp lemon juice

  • 1 tsp garlic powder

  • ½ tsp salt

  • ½ tsp black pepper


Instructions

  • Cook the Pasta:

    • Boil pasta in salted water according to package instructions. Drain and rinse under cold water.

  • Prepare the Dressing:

    • In a small bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper.

  • Assemble the Salad:

    • In a large bowl, combine cooked pasta, chicken, bacon, tomatoes, lettuce, cheese, red onion, cucumber, and avocado.

 

  • Toss & Serve:

    • Pour the dressing over the salad and toss to coat evenly.

    • Chill for 15-30 minutes before serving for best flavor.
