Ingredients
1 9-inch pie crust (store-bought or homemade)
6 slices bacon, cooked and crumbled
1 cup spring onions (green onions), sliced
1 cup shredded Gruyère or Swiss cheese
4 large eggs
1 cup half-and-half or whole milk
Salt and black pepper, to taste
Pinch of nutmeg (optional)
Instructions

Preheat oven to 375°F (190°C). Place pie crust in a 9-inch pie dish and prick the bottom with a fork. Pre-bake for 8–10 minutes.

In a skillet, sauté spring onions in a bit of bacon fat or butter for 2–3 minutes until softened.

In a bowl, whisk together eggs, half-and-half, salt, pepper, and nutmeg.

Sprinkle cooked bacon, sautéed onions, and shredded cheese evenly in the crust.

Pour egg mixture over the filling.

Bake for 35–40 minutes, or until the center is just set and the top is lightly golden.

Let cool slightly before slicing and serving.
