Easy California Roll Cucumber Salad

Ingredients

  • 2 large cucumbers, sliced into half-moons

  • 1 cup imitation crab meat (or real crab), shredded

  • 1 avocado, diced

  • 1 small carrot, julienned

  • 2 green onions, chopped

  • 2 tbsp sesame seeds

  • 1 sheet nori (seaweed), cut into thin strips

Dressing:

  • 3 tbsp mayonnaise

  • 1 tbsp rice vinegar

  • 1 tsp soy sauce

  • 1 tsp sesame oil

  • 1/2 tsp sriracha (optional, for spice)


Instructions

  • In a large bowl, combine cucumbers, crab, avocado, carrot, and green onions.

  • In a small bowl, whisk together mayonnaise, rice vinegar, soy sauce, sesame oil, and sriracha.

  • Pour dressing over the salad and gently toss until well coated.

  • Sprinkle with sesame seeds and nori strips.

  • Chill for 10–15 minutes before serving for best flavor.
