1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry or grape tomatoes, halved

1 large cucumber, diced

¼ red onion, thinly sliced (optional)

½ cup crumbled feta cheese

2 tablespoons chopped fresh parsley or dill

2 tablespoons olive oil

1 tablespoon lemon juice (or red wine vinegar)

Salt and pepper, to taste
Instructions

Prepare veggies:
In a large bowl, combine chickpeas, tomatoes, cucumber, and red onion. -
Add flavor:
Toss with olive oil, lemon juice, salt, and pepper. -
Add cheese & herbs:
Gently fold in feta cheese and fresh parsley or dill. -
Chill (optional):
Refrigerate for 15–30 minutes for best flavor. -
Serve:
