Easy Chickpea Cucumber Salad with Feta and Tomatoes

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 cup cherry or grape tomatoes, halved

  • 1 large cucumber, diced

  • ¼ red onion, thinly sliced (optional)

  • ½ cup crumbled feta cheese

  • 2 tablespoons chopped fresh parsley or dill

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice (or red wine vinegar)

  • Salt and pepper, to taste


Instructions

  1. Prepare veggies:
    In a large bowl, combine chickpeas, tomatoes, cucumber, and red onion.

  2. Add flavor:
    Toss with olive oil, lemon juice, salt, and pepper.

  3. Add cheese & herbs:
    Gently fold in feta cheese and fresh parsley or dill.

  4. Chill (optional):
    Refrigerate for 15–30 minutes for best flavor.

  5. Serve:
    Enjoy cold as a side, light lunch, or picnic dish!
