Easy Cowboy Casserole Recipe: Hearty & Delicious Comfort Food

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can cream of mushroom soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 ½ cups shredded cheddar cheese, divided
  • 1 (15 oz) can corn, drained (or 1 ½ cups frozen corn)
  • 1 (30 oz) bag frozen tater tots
  • 1 tsp Worcestershire sauce
  • ½ tsp smoked paprika (optional)

 

  • Salt and black pepper (to taste)

Instructions

  • Preheat & Prepare:

    • Preheat oven to 375°F (190°C).
    • Grease a 9×13-inch baking dish.
  • Cook the Beef Mixture:

    • In a large skillet, cook ground beef and onion over medium heat until beef is browned.
    • Add garlic and cook for 1 more minute.
    • Drain excess fat.
  • Mix the Casserole Filling:

    • Stir in cream of mushroom soup, sour cream, milk, diced tomatoes, 1 cup cheddar cheese, corn, Worcestershire sauce, smoked paprika, salt, and pepper.
    • Mix well and let simmer for 2 minutes.
  • Assemble the Casserole:

    • Spread the beef mixture evenly in the prepared baking dish.
    • Arrange frozen tater tots on top in a single layer.

 

  • Bake & Serve:

    • Bake for 30-35 minutes until bubbly and tater tots are golden brown.
    • Sprinkle remaining ½ cup cheddar cheese over the top and bake for an additional 5 minutes until melted.
    • Let cool for a few minutes before serving.
