Easy Creamy Chicken Scampi with Garlic Parmesan Rice

For the Chicken Scampi:

  • 1 lb chicken breast, cut into strips

  • 1/2 cup all-purpose flour

  • 1 tsp paprika

  • 1 tsp garlic powder

  • Salt & pepper, to taste

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream

  • 1/4 cup Parmesan cheese, grated

  • 2 tbsp butter

  • 1 tbsp lemon juice

  • Fresh parsley, chopped (for garnish)

For the Garlic Parmesan Rice:

  • 2 cups cooked white rice

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1/4 cup Parmesan cheese, grated

  • 1/4 cup heavy cream

  • Salt & pepper, to taste


Instructions

  • In a bowl, mix flour, paprika, garlic powder, salt, and pepper. Dredge chicken strips in the mixture.

  • Heat olive oil in a skillet over medium heat. Cook chicken until golden brown and cooked through. Remove and set aside.

  • In the same pan, add butter and garlic. Sauté until fragrant.

  • Stir in chicken broth, heavy cream, Parmesan, and lemon juice. Simmer until creamy. Return chicken to the skillet and coat in sauce.

  • For the rice: melt butter in a pan, sauté garlic until fragrant, then stir in rice, Parmesan, cream, salt, and pepper. Mix until creamy.

  • Serve chicken scampi over garlic Parmesan rice.

  • Garnish with parsley and extra Parmesan.
