Ingredients
For the Chicken Scampi:

1 lb chicken breast, cut into strips

1/2 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

Salt & pepper, to taste

3 tbsp olive oil

4 cloves garlic, minced

1/2 cup chicken broth

1/2 cup heavy cream

1/4 cup Parmesan cheese, grated

2 tbsp butter
-
1 tbsp lemon juice
-
Fresh parsley, chopped (for garnish)
For the Garlic Parmesan Rice:

2 cups cooked white rice
-
2 tbsp butter
-
3 cloves garlic, minced
-
1/4 cup Parmesan cheese, grated

1/4 cup heavy cream
-
Salt & pepper, to taste
Instructions

In a bowl, mix flour, paprika, garlic powder, salt, and pepper. Dredge chicken strips in the mixture.

Heat olive oil in a skillet over medium heat. Cook chicken until golden brown and cooked through. Remove and set aside.

In the same pan, add butter and garlic. Sauté until fragrant.

Stir in chicken broth, heavy cream, Parmesan, and lemon juice. Simmer until creamy. Return chicken to the skillet and coat in sauce.

For the rice: melt butter in a pan, sauté garlic until fragrant, then stir in rice, Parmesan, cream, salt, and pepper. Mix until creamy.

Serve chicken scampi over garlic Parmesan rice.

Garnish with parsley and extra Parmesan.
