  • 2 cups cooked rice (day-old works best)

  • 2 eggs, beaten

  • 1 cup mixed veggies (peas, carrots, corn)

  • 23 tbsp soy sauce

  • 2 green onions, chopped

  • 2 tbsp oil (vegetable or sesame)

  • Optional: cooked chicken, shrimp, or ham


Instructions

  • Heat oil in a large skillet or wok over medium-high heat.

  • Scramble eggs, then push to one side of the pan.

  • Add veggies and stir-fry for 2–3 minutes.

  • Add rice, soy sauce, and mix everything together.

 

  • Stir-fry until heated through, then toss in green onions.
