2 cups cooked rice (day-old works best)

2 eggs, beaten

1 cup mixed veggies (peas, carrots, corn)

2–3 tbsp soy sauce

2 green onions, chopped

2 tbsp oil (vegetable or sesame)

Optional: cooked chicken, shrimp, or ham
Instructions

Heat oil in a large skillet or wok over medium-high heat.

Scramble eggs, then push to one side of the pan.

Add veggies and stir-fry for 2–3 minutes.

Add rice, soy sauce, and mix everything together.

Stir-fry until heated through, then toss in green onions.
