Ingredients

– 4 cups bread flour (plus extra for dusting)

– 1 tbsp sugar

– 1 ½ tsp salt

– 1 tbsp instant yeast

– 1 ¼ cups warm water (about 110°F / 43°C)

– 1 tbsp vegetable oil
For boiling:

– 2 quarts water

– 2 tbsp honey or sugar
Optional toppings:

– Sesame seeds, poppy seeds, everything bagel seasoning, coarse salt, etc.
Instructions

Make the dough: In a large bowl, mix flour, sugar, salt, and yeast. Add warm water and vegetable oil, and stir until a dough forms.

Knead: Turn dough onto a floured surface and knead for about 8–10 minutes until smooth and elastic.

First rise: Place dough in an oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.

Shape bagels: Punch down dough, divide into 8 equal pieces. Shape each into a ball, then poke a hole through the center and stretch gently to form a bagel shape.

Second rise: Place shaped bagels on a baking sheet lined with parchment paper, cover, and let rise for 20 minutes.

Preheat oven: Heat oven to 425°F (220°C). Bring water and honey/sugar to a boil in a large pot.

Boil bagels: Boil bagels, 2–3 at a time, for 1 minute on each side. Remove with a slotted spoon and place back on the baking sheet.

Add toppings: Sprinkle with your favorite toppings while bagels are wet.

Bake: Bake for 20–25 minutes or until golden brown.

Cool: Let cool on a wire rack before slicing and enjoying!
