8 oz rotini or penne pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup black olives, sliced

1/2 cup red bell pepper, diced

1/2 cup pepperoni slices or salami (optional)

1 cup mozzarella balls or cubed mozzarella

1/4 cup red onion, thinly sliced

1/4 cup fresh basil, chopped
Dressing:

1/4 cup olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Dijon mustard (optional)
Instructions
1. Cook Pasta:
Cook pasta according to package instructions until al dente. Drain, rinse with cold water, and set aside.
2. Prepare Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic powder, salt, pepper, and Dijon mustard.
3. Combine Salad Ingredients:
In a large bowl, mix cooked pasta, cherry tomatoes, cucumber, olives, bell pepper, pepperoni (if using), mozzarella, red onion, and basil.
4. Toss with Dressing:
Pour dressing over salad and toss gently until everything is well coated.
5. Chill and Serve:
Refrigerate for at least 30 minutes before serving to let flavors meld.
