2 lbs baby potatoes (or russet, cut into chunks)

3 tbsp olive oil

3 cloves garlic, minced

1 tsp paprika

1 tsp Italian seasoning (or dried thyme/rosemary)

1/2 tsp onion powder

Salt & pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Cut potatoes into halves or chunks for even roasting.

In a large bowl, toss potatoes with olive oil, garlic, paprika, Italian seasoning, onion powder, salt, and pepper.

Spread evenly on the prepared baking sheet.

Roast for 35–40 minutes, flipping halfway through, until golden brown and crispy.

Garnish with parsley and serve hot as a perfect side dish!
