Easy Oven Roasted Potatoes Recipe

Ingredients

  • 2 lbs baby potatoes (or russet, cut into chunks)

  • 3 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp Italian seasoning (or dried thyme/rosemary)

  • 1/2 tsp onion powder

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Cut potatoes into halves or chunks for even roasting.

  • In a large bowl, toss potatoes with olive oil, garlic, paprika, Italian seasoning, onion powder, salt, and pepper.

  • Spread evenly on the prepared baking sheet.

  • Roast for 35–40 minutes, flipping halfway through, until golden brown and crispy.

 

  • Garnish with parsley and serve hot as a perfect side dish!
