– 2 cups fresh peaches, peeled and diced

– 1/2 teaspoon ground cinnamon

– 1/2 cup milk

– 1 large egg

– 1 teaspoon vanilla extract

– Vegetable oil, for frying

– Powdered sugar, for dusting (optional)
Instructions

Prepare Batter:
In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. -
Mix Wet Ingredients:
In another bowl, beat milk, egg, and vanilla extract until combined. -
Combine:
Pour wet ingredients into dry ingredients and stir until just combined. Gently fold in the diced peaches. -
Heat Oil:
Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat to 350°F (175°C). -
Fry Fritters:
Drop spoonfuls of batter into the hot oil, being careful not to overcrowd. Fry until golden brown, about 2–3 minutes per side. -
Drain:
Remove fritters with a slotted spoon and drain on paper towels.

Dust with powdered sugar if desired and serve warm.
