Easy Ranch Roasted Carrots Recipe | Simple, Flavorful Side Dish

  • 1 lb baby carrots (or sliced large carrots)

  • 2 tbsp olive oil

  • 1 packet (1 oz) ranch seasoning mix

  • ½ tsp garlic powder (optional)

  • ¼ tsp black pepper

  • 2 tbsp grated Parmesan cheese (optional)

  • Fresh parsley for garnish (optional)


Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  • Season the carrots:
    In a large bowl, toss the carrots with olive oil, ranch seasoning mix, garlic powder, and black pepper until evenly coated.

  • Roast:
    Spread the carrots in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway, until tender and slightly caramelized.

  • Add Parmesan (optional):
    Sprinkle grated Parmesan cheese over the carrots during the last 5 minutes of roasting for extra flavor.

 

  • Garnish and serve:
    Remove from the oven, sprinkle with fresh parsley, and serve warm.
