1 lb baby carrots (or sliced large carrots)

2 tbsp olive oil

1 packet (1 oz) ranch seasoning mix

½ tsp garlic powder (optional)

¼ tsp black pepper

2 tbsp grated Parmesan cheese (optional)

Fresh parsley for garnish (optional)
Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

Season the carrots:
In a large bowl, toss the carrots with olive oil, ranch seasoning mix, garlic powder, and black pepper until evenly coated. -
Roast:
Spread the carrots in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway, until tender and slightly caramelized. -
Add Parmesan (optional):
Sprinkle grated Parmesan cheese over the carrots during the last 5 minutes of roasting for extra flavor.

Garnish and serve:
Remove from the oven, sprinkle with fresh parsley, and serve warm.
