Garlic Butter Chicken with Lemon Parmesan Pasta: A Delicious and Satisfying Meal

For the Chicken:

4 boneless, skinless chicken breasts

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

2 tbsp olive oil

4 tbsp unsalted butter

4 garlic cloves, minced

For the Pasta:

12 oz spaghetti or fettuccine

2 tbsp olive oil

4 tbsp unsalted butter

3 garlic cloves, minced

1/4 cup fresh lemon juice (about 2 lemons)

1 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

Salt and pepper to taste


Instructions

Prepare the Chicken:

 

Season the chicken breasts with salt, pepper, and paprika.

Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 4-5 minutes per side, until golden brown and fully cooked (internal temp: 165°F). Remove from skillet and set aside.

In the same skillet, melt the butter and add the minced garlic. Cook for 1-2 minutes, until fragrant. Pour the garlic butter over the cooked chicken.

Cook the Pasta:

 

Boil the pasta according to package instructions. Reserve 1 cup of pasta water, then drain.

In a large skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 1-2 minutes.

Stir in the lemon juice and Parmesan cheese, mixing until smooth. Add the cooked pasta and toss to coat. If needed, add reserved pasta water to loosen the sauce.

Season with salt and pepper, and sprinkle with fresh parsley.

Assemble the Dish:

 

Plate the lemon Parmesan pasta and top with the garlic butter chicken. Garnish with extra parsley and Parmesan, if desired.
