Ingredients
1 lb large shrimp, peeled and deveined
4 medium zucchini, spiralized into noodles
3 tablespoons unsalted butter
3 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
Juice of 1/2 lemon
2 tablespoons fresh parsley, chopped
Grated Parmesan, for serving (optional)
Instructions

Pat shrimp dry and season with salt and pepper.

In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes, sauté for 1 minute until fragrant.

Add shrimp and cook for 2–3 minutes per side, until pink and cooked through. Remove shrimp and set aside.

In the same skillet, add zucchini noodles and cook for 2–3 minutes until just tender.

Return shrimp to the pan and toss with zoodles. Add lemon juice and sprinkle with parsley.

Serve immediately with grated Parmesan, if desired.
