Ingredients

1 pound sirloin steak, cut into bite-sized pieces

1 1/2 pounds baby potatoes, quartered

3 tablespoons olive oil

4 tablespoons unsalted butter

5 garlic cloves, minced

1 teaspoon fresh thyme (or 1/2 tsp dried)

1 teaspoon fresh rosemary (or 1/2 tsp dried)

Salt and black pepper, to taste

Fresh chopped parsley, for garnish
Instructions
Cook the Potatoes:
In a large skillet over medium heat, add 2 tablespoons olive oil. Add quartered potatoes, season with salt and pepper, and cook until golden and tender, about 15–20 minutes, stirring occasionally. Remove and set aside.
Sear the Steak Bites:
In the same skillet, add 1 tablespoon olive oil. Season steak bites with salt and pepper. Add to hot skillet and cook for 2–3 minutes per side until browned. Remove and set aside.
Make Garlic Butter:
In the same pan, reduce heat to low and add butter. Once melted, stir in minced garlic, thyme, and rosemary. Sauté for 30 seconds until fragrant.
Combine & Coat:
Return steak bites and potatoes to skillet. Toss everything in the garlic butter sauce for 1–2 minutes until well coated and warmed through.
Serve:
Garnish with fresh parsley and serve hot!
