Grilled California Avocado Chicken Recipe: A Fresh and Flavorful Summer Favorite

  • 4 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 tablespoon olive oil

  • 4 slices mozzarella or provolone cheese

  • 12 ripe avocados, sliced

  • 12 tomatoes, sliced

  • 4 slices cooked bacon (optional, but recommended)

  • Fresh basil or parsley for garnish (optional)


Instructions

  • Preheat grill to medium-high heat.

  • Season chicken on both sides with salt, pepper, garlic powder, and paprika.

  • Brush with olive oil, then grill chicken for 6–7 minutes per side, or until fully cooked (internal temp of 165°F).

  • Top each piece with a slice of cheese during the last minute of grilling. Cover grill to melt cheese.

  • Remove chicken from the grill and immediately top with sliced avocado, tomato, and cooked bacon.

  • Garnish with chopped basil or parsley if desired.

 

  • Serve hot with salad, rice, or grilled veggies.
