Grilled Veggie Skewers Recipe – Colorful, Flavorful, and Perfect for Any Occasion

1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 zucchini, sliced into thick rounds
1 red onion, cut into wedges
1 cup cherry tomatoes
8 oz mushrooms, halved
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 cloves garlic, minced
1 teaspoon dried Italian herbs
Salt and black pepper, to taste
Wooden or metal skewers


Instructions

  • In a large bowl, whisk together olive oil, balsamic vinegar, garlic, herbs, salt, and pepper.

  • Add all chopped veggies to the bowl and toss to coat evenly.

  • Thread vegetables onto skewers, alternating colors and types for variety.

  • Preheat grill or grill pan over medium-high heat.

  • Grill skewers for 10–12 minutes, turning occasionally, until veggies are tender and slightly charred.

 

  • Serve warm as a main or side dish.
