Ingredients
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 zucchini, sliced into thick rounds
1 red onion, cut into wedges
1 cup cherry tomatoes
8 oz mushrooms, halved
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 cloves garlic, minced
1 teaspoon dried Italian herbs
Salt and black pepper, to taste
Wooden or metal skewers
Instructions

In a large bowl, whisk together olive oil, balsamic vinegar, garlic, herbs, salt, and pepper.

Add all chopped veggies to the bowl and toss to coat evenly.

Thread vegetables onto skewers, alternating colors and types for variety.

Preheat grill or grill pan over medium-high heat.

Grill skewers for 10–12 minutes, turning occasionally, until veggies are tender and slightly charred.

Serve warm as a main or side dish.
