Grilled Zucchini with Lemon and Parmesan: A Fresh and Healthy Side Dish

2 medium zucchinis, sliced lengthwise into 1/4-inch strips
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
Salt and black pepper, to taste
1/4 cup grated Parmesan cheese
Fresh parsley, chopped (optional)


Instructions

  • Preheat grill or grill pan over medium-high heat.

  • In a bowl, toss zucchini slices with olive oil, lemon juice, zest, salt, and pepper.

  • Grill zucchini for 2–3 minutes per side, until tender and grill marks appear.

  • Transfer to a plate and sprinkle with Parmesan while still warm.

 

  • Garnish with fresh parsley if desired and serve immediately.
