1 red bell pepper, chopped

1 zucchini, sliced

1 cup broccoli florets

1 red onion, sliced

3 tablespoons olive oil

3–4 cloves garlic, minced

Salt and pepper to taste
Instructions

Preheat oven to 425°F (220°C).

Toss vegetables with olive oil, garlic, salt, and pepper.

Spread in a single layer on a baking sheet.

Roast for 25–30 minutes, stirring halfway through, until tender and lightly browned.
