  • 4 boneless chicken thighs (or breasts)

  • ½ cup pineapple juice

  • ¼ cup soy sauce

  • ¼ cup brown sugar

  • 2 tbsp ketchup

  • 1 tbsp rice vinegar

  • 1 tbsp minced garlic

  • 1 tsp grated ginger


Instructions

  • In a bowl, mix pineapple juice, soy sauce, brown sugar, ketchup, vinegar, garlic, and ginger.

  • Marinate chicken in the mixture for at least 2 hours (overnight for best flavor).

  • Grill over medium heat for 5–7 minutes per side, basting with extra marinade.

 

  • Serve with rice and grilled pineapple.
